Only four ingredients, these simple cookies are a breeze to make -- and they're gluten- and grain-free, too!
Easy Peanut Butter - Chocolate Chip Cookie Recipe
1 C peanut butter (regular, not "natural")
1 C white sugar
1 large egg
1/2 C semi-sweet chocolate chips
In a medium bowl, stir together the peanut butter, sugar, and egg until well-combined. Add chocolate chips; mix. Scoop into 1/4 C sized balls and place on a greased or parchment paper-lined cookie sheet, flattening with palm or the bottom of a drinking glass. Bake cookies at 350 degrees Fahrenheit for about 12 minutes. Cookies will appear not-quite-done when taken out of the oven -- be patient! They will firm up as they cool.
Recipe can be easily doubled or tripled. For smaller (and therefore more) cookies, make walnut-sized balls and bake for 8-10 minutes.
